Peach Pie mmmm

Robert brought home a big bag of peaches from his daughter's landlady. They were a little bruised and not so pretty, and I was inspired to make peach pie. I am really glad I did; this pie is so delicious.



I used a basic pie dough recipe (2 1/2 cups flour, 2 sticks butter, 1 tsp salt, 1/4 cup ice water) that really came out well. For the filling, since the peaches were very small, I used about 25. I blanched them so they would peel easily and then sliced them. I made a mix of 1/3 cup flour, 1/2 cup brown sugar, and cinnamon and cloves, and mixed it with the peaches. I poured the mix into a prepared pie shell, covered it with another one, glazed it with a milk/egg mixture, and put it in the oven. I baked it at 430 F for 15 min, then 350 F for 30 min. I turned off the oven and let it cool down inside to help let it set for about an hour and a half. (recipe based on this one)

I couldn't even wait for my dinner I just had to have a slice!
