More Zucchini = Chocolate Zucchini Bread

The zucchini plants are still pumping out a ton of zucchini. The day before I made these, I made the zucchini bread I made last week, but there is really a lot and I promised Anna I would make more chocolate zucchini bread. I made these yesterday, about 24 in total, and today there are probably 6 left.


Muj delicioso. And I ate three today.






Chocolate Zucchini Muffins

makes about 24 muffins

Ingredients

3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground cardamom

3 eggs
1 cup brown sugar
1 banana mashed into a 1 cup measuring cup, the rest filled with oil
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons vanilla extract
2 heaping cups grated zucchini
1 cup chocolate chips

Instructions
Preheat oven to 450 degrees F.
Mix together flours, baking soda, baking powder, and spices into a bowl.
In another bowl, beat the eggs. Beat in in the sugar and oil/banana mix. Add the cocoa powder, vanilla, mix again, and then add the zucchini and chocolate chips.
Add the dry ingredients, and mix.
Pour into a muffin tin lined with paper liners.
Put into the oven, turning the temperature down after about 5 minutes to 350 degrees F. Bake for about 20-25 minutes.
Let cool a little in the pans, and then tranfer to cooling racks.
