Dinner Last Night: Spicy Lentil Burritos

(this is actually from a couple weeks ago but still delicious!)




Spicy Lentil Burritos

adapted from Feasting Freds
makes about 5 burritos

Ingredients 
2 Tbs. olive oil
2 onions, finely chopped
3 cloves garlic, minced
2 cup dried brown lentils,thoroughly rinsed
5 cups water or vegetable broth (I use water + bullion)
3 grated beets
½ cup fresh shelled peas
about 2 cups chopped greens (chard, kale, spinach, beet greens**but adjust cooking time accordingly**)

Seasoning Mix:
2 tbsp chili powder
2 tbsp chili powder
4 tsp ground cumin
1 tsp kosher salt
2 tsp smoked paprika
1 tsp ground coriander
½ tsp cayenne pepper
1 tsp dried oregano
1 tsp chipotle powder


Instructions
Heat the oil in a saucepan over medium heat. Add the onion, and cook until translucent. Add the garlic and let cook until fragrant.

Add in the lentils, spices, and water/broth, and grated beets, stir, and bring to a boil. Then turn down to medium-low, cover, and let simmer for 25-35 minutes. About five to ten minutes before it's done, add the peas and greens (if using kale, allow maybe 20 minutes). Add more water if necessary, or remove lid to evaporate some water. Let cook until lentils are tender and mixture is thick.

Use to make burritos, adding guacamole on top to make it extra delicious.
