Dinner Last Night: Deconstructed Hummus Chickpea Salad with Vegan Sausage

I saw this recipe about a week ago that I wanted to try, and last night I finally had the chance as well as all the ingredients. I'm always looking for a good chickpea salad, and I think this one is really awesome, and it doesn't require any weird ingredients. I also had leftover vegan sausages that I made from the ppk a while back and froze. I sliced them up and fried them, and they went really well with the chickpea salad.



Deconstructed Hummus Chickpea Salad

Ingredients
1 can chickpeas, drained and rinsed well
1 very small onion or 1/2 a large onion, finely chopped
3 tbps chopped cilantro (I used cilantro I had frozen last fall)
2 cloves of really finely minced garlic (i used the pre-minced stuff from a jar, and probably put 2 tbsp in)
3 tbsp lemon juice
a scant 1/4 cup tahini
1 tbsp toasted sesame seeds
1 tsp cumin
1 tsp celery salt
more salt to taste
drizzle of olive oil

Instructions
Mix everything together in a bowl. Add more garlic, salt, oil, lemon juice to taste. I like things really garlicky and sour, so I just put a TON of lemon juice and garlic.
